Amazing Thanksgiving leftovers

This is my all time favorite “how to re-use your leftovers”. I created this recipe about 3 years ago.
When I was a kid it was really rare to start dinner without a soup. Soup was always the first course. My grandmother used to make Tortellini al brodo, tortellini cooked in stock, most commonly beef stock. With a nice shower of grated parmegiano that was one of my favorite. Simple comfort food all’Italiana.
A few years ago, Thanksgiving was colder than usual in San Francisco and I craved for a soup. That’s when I came up with the Thanksgiving tortellini al brodo!
Ingredients:
Turkey stock
Tortellini (preferably with cheese filling)
Leftover turkey meat
Leftovers stuffing
Parsley (to decorate)
And nice parmegiano
Bring your stock to a simmer. In a frying pan just sauté a handful of diced leftover turkey meat, then add a few spoon full of the stuffing.
Once your stock is simmering, taste it and see if you need to add more salt and pepper, then throw in your tortellini. They will cook very fast so please don’t over cook them.
In a plate (warmed up in the oven) plate some of the tortellini and the stock, add a couple spoon of the stuffing/meat mix in the middle, sprinkle with chopped parsley and grated parmegiano, Voila!
