Express dinner for a group of friend
Thursday, December 4, 2008
Tonight I had five friends coming over for cocktails and dinner. I had to work all day, I need something fast and labor-less.
The simplest thing to do when you have a group of people at the last minute: Pasta
I run down to the store, grabbed 2 bunch of spinach, 3 handful of cremini, and some pancetta. I had some pine nuts in the cupboard and fresh goat cheese in my fridge. You see where I am going? This is my favorite 10 minute pasta!
In a pan toast some pin nuts and set aside. Then, dice the pancetta (bacon can do too) in small cube and sauté it in a pan until nice and crisp - set aside. The if you don’t have enough fat in pan just add a bit of olive oil, then sauté your mushroom. At this point you should have the pasta in the boiling water cooking. When your mushroom are almost done, crush a clove of garlic add it to the pan and finish the cooking. Add the cleaned spinach to you pan and gently cook until the spinach start to welt from the heat. Salt and pepper to taste. Drain your pasta, drizzle them with a good olive oil, add the spinach mushroom (without the garlic clove), add the pine nuts and pancetta, and crumble some goat cheese on top. Toss all together and you’re done!
I made a salad with that just plain green salad with sliced radishes. That’s it Dinner for 6.
Bon Appétit!
