Easy healthy dinner

After the heavy holidays and the liver ready to explode, I felt like eating something fresh tonight. Something simple, easy to make and ready in 5 minutes.
I insist, good food doesn’t have to take hours to make, it’s about just satisfy our eyes, nose and palate. For me tonight I needed colors, crunchiness and freshness.
I made a big salad and served it with cracked dungeness crab.
For the salad you need:
(Will feed 2-3)
1 handful of green beans $0.58
1 small red paper $0.50
3 thinly sliced radishes $0.99 (bunch)
1 ear of corn $0.99
1 lettuce red leaf $1.69
Whole crab $12.79
Total: $17.54
I made a very simple vinaigrette: whisking in a couple tablespoons of vinegar (red wine or banyul) with a small amount of mustard, just the tip of your knife, salt and pepper until the mustard is entirely dissolved, then I had slowly while still whisking the 4 tablespoons of olive oil.
Of course it is important for you to taste it, everyone is different, if you want more mustard, put more, more vinegar, have fun!
I like to add a bit of minced garlic and parsley to my vinaigrette.
Then I blanched quickly the greens beans in boiling salted water. it should only take a couple minutes then transfer the green beans in a bowl filled with ice and water to stop the cooking. Drain. Once dried, toss them a couple of time in your vinaigrette and set them aside.
Slice the bell pepper after you have removed the seeds and inside membrane, same thing, toss them in the vinaigrette and set aside.
I cut of the kernel of the cob and add them to the vinaigrette, add the radishes sliced thinly and the salad.
Plate and use your green beans and bell pepper for garnish and extra color.
I made a very quick aioli with the crab though my favorite way to eat it was shown to me buy Chef Tetsuo, and it with Ponzu sauce.
This felt so good an refreshing, gave a break to the liver.
