Soup and grilled cheese

When my niece came over on Saturday night for a quiet movie night, I felt like grilled cheese and soup sounded perfect for the occasion. I didn’t feel like getting in the kitchen for hours and spending some times with her was more important that spending time in the kitchen.
I made quick spinach soup by boiling 2 potatoes in some home-made chicken stock, and added some spinach at the end. I used a blender to reduce the soup to a creamy texture. I added bit of heavy cream before serving it. Salt and pepper to taste.
The grilled cheese was made with Rosemary country bread, truffle ham I find at Lucca (on Valencia St. and 22nd) and some good Fontina cheese. This is an up-graded version of a grilled cheese and it was delicious!
The girl loved it and it was a perfect quick meal at home.
