Tagliatelle with Chanterelles
Sunday, March 29, 2009
When by myself on a Sunday night with not a big motivation for cooking, I always pick something easy to make and delicious. My favorite comfort food is of course pasta, my family being Italian I grew up with Pasta.
In a hot skillet I sautéed a fennel sausage in a little bit of olive oil, I removed the skin and broke it in to small pieces. When the meet is almost cooked I throw in the pan some finely chopped shallots. And without letting the shallots getting too much color I had my chanterelle cut into large pieces.
Put your fresh pasta in boiling water to cook. I recommend fresh pasta instead of dry because I think it’s better. I usually reserve dry pasta for sauces.
When your pasta are cooked al dente, just add them to the pan, add also a some chopped garlic and parsley and a bit more olive oil to coat the pasta if needed and serve.
This is a 5 minute recipe, it’s so good and so simple!
