Smoked salmon salad

When Chef Tetsuo gave me the amazing gift of some of his Sake (Smoked salmon), first I thought I was going to wake up in the middle of the night just to have a bite of it without the BF noticing. But then again, I knew I could find a better use for it.
I have to say this is the best smoked salmon I have ever tasted. Though I have tried to get Chef Tetsuo’s secret, I have yet to find where this fish comes from. It is the softest and most tender piece of fish you will put in your mouth. It melt to the contact of your tongue, when Chef Tetsuo make Nigiri out of the bely of the animal, it’s a pure Foodgasm!
Tonight I was by myself, l decided to make a quick Mache salad with champagne vinaigrette, topped with some slices of the smoked salmon and poached egg.
Dinner was made in 5 minutes the mache was so good with the slightly saltiness of the salmon. Why a poached egg? Well why not? It’s one of my favorite thing in the world why not combine it with the salad?
I enjoy this a lot and would recommend the combination!
