When after work my friends invited me over to their house for dinner, I knew I was in for guest chefing this one!
I wanted something really easy to make, as on a Friday night I didn’t want to spend my time in the kitchen.
My friend served me a cocktail to help with the process. He calls it an Almodovar. It’s a vodka based cocktail with tomato juice and a few spoon of Gazpacho, topped with chives. It’s really good!!
Asperges en Vinaigrette
I started by steaming some asparagus and set them aside to cool. With a shallot vinaigrette it’s the perfect first course.
Top it with fresh chopped parsley.
Liguine alle vongole
In a pan sweat some shallots in some olive oil. Once your shallots are cooked, add some garlic (I like a lot of it myself) and about 1 1/2 cups of dry white wine, add salt and pepper, let the sauce reduce and the alcohol burn off. Then add your clams. Make sure to rinse your clams well as they collect a lot of sand. I usually leave them in a bowl of cold water for 3 minutes and rinse them, and repeat the operation a few times.
Once you have added your clams cover your pan for 2 minutes, it will help the clam to open.
Add your cooked pasta in the pan and toss with fresh chopped parsley.
Here you have it, a wonderful dish in few minutes. Serve with some grilled bread
